necessary & sufficient coffee® is an independently owned café company in Chicago, built around craft, care, and the belief that hospitality should be good for the people doing the work as well as the people being served.

We don’t chase growth for growth’s sake. We build teams deliberately, pay transparently, and expect professionalism — because that’s what allows us to offer real flexibility, longevity, and pride in work.

    Prior café experience can be helpful, but it’s not everything. Curiosity, reliability, and a thoughtful approach to work matter more than bravado or speed alone.

  • We operate with a living wage + auto-gratuity model, rather than relying on traditional tipping. This allows us to offer more predictable pay, reduce income volatility, and distribute compensation more equitably across roles.

    Scheduling is built intentionally, with an emphasis on clarity, coverage, and sustainability — for the business and for the people working here. Expectations are communicated clearly, and we value follow-through and professionalism.

  • A Specialty Coffee Barista is a learned craft. It’s science, art, skill, and sensory development with a deep love for hospitality, It can take more than two years of dedicated work to become proficient.

    At necessary & sufficient we:

    • Train on the job through supervision, repetition, and sensory development

    • We expect you to invest your time as well by learning from the teaching materials we’ve developed for you.

    • Twice a year we close for a mandatory multi-day training as a team.

    • We conduct reviews.

    • We test your skills and knowledge.

    Both understanding and using mise èn place is of vital importance to this role. As is the ability to proactively lean into solving problems.
